Rajas con Crema- ft. Rizo Brothers Cheese

Rajas con Crema con Pollo

My definition of Mexican comfort food… Roasted poblanos, chicken, and corn in a rich and creamy sauce: how can you go wrong? Rizo Brothers cheese and Sabor Mexicano chips make all of the difference! 

Ingredients

  • 3 large roasted poblano peppers, cut into strips
  • 3 tablespoons butter
  • 1 medium white onion, sliced in strips
  • ½ – 1 lb chicken breast or thighs, cut into thin strips
  • 1 teaspoon chili powder (or more to taste)
  • salt & pepper, to taste
  • 2 garlic cloves, minced
  • 1 cup corn kernels
  • ½ cup sour cream 
  • 1 cup heavy whipping cream
  • 1 cup Rizo Bros cheese of your choice (I suggest cotija or Oaxaca!)

Instructions

  1. Lightly brush each side of the poblanos with olive oil. Place under broiler until charred (flipping halfway). Set aside to cool, then slice in to thin strips. 
  2. In a medium saucepan or skillet, add the butter and onions over medium-high heat. Sautee until onion starts to soften. Add the garlic, chicken, corn, and roasted poblano strips. Cook for about 10 minutes stirring often, until chicken is nearly cooked through. Season with salt, pepper, and chili powder.
  3. Lower the heat and slowly stir in the heavy cream and sour cream until combined. 
  4. Once simmering, stir in the cheese until melted.
  5. Serve with rice, tortillas, chips… or all of the above! I highly recommend eating with my favorite Sabor Mexicano chips!
