Seriously, never spending money on takeout honey walnut shrimp again! This is such an easy, affordable, fresh alternative—plus I think it tastes even better! I suggest using frozen shrimp (can’t beat the price at Target!). Just defrost in ice water for a couple hours, or until no longer frozen.

INGREDIENTS:
½ cup water
¾ cup white sugar
½ cup pecans*
1 egg
1 cup cornstarch
1 pound peeled & deveined shrimp
½ cup mayonnaise
3 ½ tablespoons honey
1 ½ tablespoon sweetened condensed milk
Oil for frying
DIRECTIONS:
- In a saucepan, bring water and sugar to a boil. Add in pecans and cook, stirring often, about 5 minutes. Drain using paper towels and pat dry. Set aside.
- To prepare the sauce, mix the mayonnaise, honey, and sweetened condensed milk. Set aside.
- Prepare to dredge your shrimp! Whisk egg in one bowl and pour cornstarch in to another.
- Lightly dip shrimp in egg and then cornstarch.
- Heat about ½ inch of oil in a shallow pan or dutch oven. Fry shrimp for about 4 minutes on each side, or until pink.
- In the same pan, fry pecans for 1-2 minutes.
- Toss the shrimp with the sauce and top with pecans. Serve with rice, salad, or however you desire!
* Or whatever nut you like! Personally, I think the pecans are a great substitution for the typical walnuts.
