Honey Pecan Shrimp

Seriously, never spending money on takeout honey walnut shrimp again!  This is such an easy, affordable, fresh alternative—plus I think it tastes even better! I suggest using frozen shrimp (cant beat the price at Target!). Just defrost in ice water for a couple hours, or until no longer frozen.

INGREDIENTS:

½ cup water

¾ cup white sugar

½ cup pecans*

1 egg

1 cup cornstarch

1 pound peeled & deveined shrimp

½ cup mayonnaise

3 ½ tablespoons honey

1 ½ tablespoon sweetened condensed milk

Oil for frying

DIRECTIONS:

  1. In a saucepan, bring water and sugar to a boil. Add in pecans and cook, stirring often, about 5 minutes. Drain using paper towels and pat dry. Set aside. 
  2. To prepare the sauce, mix the mayonnaise, honey, and sweetened condensed milk. Set aside.
  3. Prepare to dredge your shrimp! Whisk egg in one bowl and pour cornstarch in to another. 
  4. Lightly dip shrimp in egg and then cornstarch.
  5. Heat about ½ inch of oil in a shallow pan or dutch oven. Fry shrimp for about 4 minutes on each side, or until pink.
  6. In the same pan, fry pecans for 1-2 minutes.
  7. Toss the shrimp with the sauce and top with pecans. Serve with rice, salad, or however you desire! 

* Or whatever nut you like! Personally, I think the pecans are a great substitution for the typical walnuts.
