
INGREDIENTS:
½ cup Judee’s Jalapeno Cheddar Cheese Corn Grits
2 cups milk or water
2 TBSP butter
Pinch of salt
Toppings of Choice: protein, cheese, beans, corn, avocado, guacamole, sour cream, salsa…the options are limitless!
DIRECTIONS:
- In a nonstick saucepan, bring milk or water to a boil.
- Whisk in corn grits to the boiling milk or water.
- Reduce heat and simmer for 5-8 minutes until thickened.
- Add butter and salt to taste.
- Remove from heat and cool for 15 minutes.
- Preheat your waffle maker. (featured here as Belgian style!)
- After grits are cooled, spoon half the mixture into the waffle maker and bake until done, around 10 minutes. Repeat with the rest of the mixture.
- Add your toppings and serve.

Sauté onions, corn, bell peppers, and your favorite pre-mixed chorizo. Serve warm over freshly pressed waffles with a generous drizzle of Mexican crema aside a lightly dressed side of romaine lettuce. Sprinkle with cotija or queso fresco and a few squeezes of lime.
