Citrus Peach Pulled Chicken Bowls with Citrus Herb Wheat Bread

“Spring” intrmer weather, picnics, and gatherings with friends- without compromising flavor on your favorite foods. This crowd-pleasing recipe is super simple- thanks to some of my favorite Noble Made products! Plus, there’s a sneaky twist that makes it guilt-free and just as good! With just 3 simple parts to the recipe that can be done ahead of time or in your own order, these Citrus Peach Pulled Chicken Bowls couldn’t be simpler!

INGREDIENTS

PEACH BBQ PULLED CHICKEN

1.5lb chicken thighs or breast

1 can sliced peaches in 100% juice

6 oz (1/2 bottle) Noble Made Less-Sugar Mustard BBQ Sauce

6 oz (1/2 bottle) Noble Made Less-Sugar Original BBQ Sauce

2 tbsp minced onion 

Salt & pepper

CITRUS AVOCADO SLAW

1 bag shredded tri-color coleslaw 

4-5 oz Noble Made Citrus Herb Marinade

1/2 ripe avocado, mashed thoroughly 

3 tbsp Greek yogurt

WHOLE WHEAT CITRUS HERB BREAD

2 cups + 2 tablespoons whole wheat flour

¾ cup bread flour

½ teaspoon salt

½ teaspoon Noble Made Citrus Herb Seasoning

1 ½ teaspoons instant yeast

2 tablespoons unsalted butter, softened

1 – 1 ¼ cups cool water

DIRECTIONS:

1. Combine pulled chicken ingredients in a crockpot/slow cooker and cook on low for 5 hours, or until meat falls apart and is easy to shred (optional- marinate your chicken with all ingredients overnight).

2. While the chicken is cooking, start making the bread:

  • Combine flours, salt, herb seasoning, and instant yeast in the bowl of a stand mixer.
  • Add the butter and 1 cup of the water. 
  • With a dough hook attachment, mix on medium speed until combined. If the dough is too dry, add more water, a tablespoon at a time, until you have picked up all the flour from the sides of the bowl. You want a soft, but not soggy dough.
  • Knead dough in the mixer for 8 minutes.
  • Spray a large glass bowl with cooking spray and add the kneaded dough.
  • Cover with plastic wrap and let rise for 3 hours.
  • After the dough has risen, gently turn it out on a lightly floured surface.
  • Gently mold into a loaf shape and place in a 9-inch loaf pan that has been sprayed with cooking spray. 
  • Cover with plastic wrap and let rise for 1 hour.
  • Preheat oven to 425 degrees.
  • Remove plastic wrap, and bake the loaf for 30 minutes or until the internal temperature is 190 degrees on an instant read thermometer.
  • Cool the loaf, out of the pan, on a wire rack.

3. Mix up the slaw by combining all ingredients in a large bowl – refrigerate at least 2 hours for best taste. 

4. Using the chicken and slaw, make your own bowl and enjoy your bread on the side or serve it as an open-faced sandwich!
